Late Post

Lunch time yesterday for my family and I, consisted of leftover brisket, that i transformed into grilled cheese sandwiches. The whole purpose of our Christmas dinner being the brisket, was so that i could in turn, make these grilled cheese. Texas toast, smoked gouda, sharp cheddar, sweet chili mayo... too damn good!!

I got leftover, leftovers, so I'll be doin this again, Hooray Me. I'll bring more pics with the prep

Today's Menu

Lunch today, will consist of, smoked brisket grilled cheese sandwiches... holla if you see me!!

B.Y.O.B

This isn't my first time ranting about this. I know the health risk associated with this, oh so, Not! so good for me, habit... but, it's a hard habit to break. I get creepers in the kitchen when when the aroma hits the air. I get stares when I walk out of the kitchen with my sandwich an there's none left for anyone else to eat. Now mind you, I'm not a complete asshole, there are instances where I will share in this devine, culinary creation, it just depends on the meal. It drives wedges into the fine fibers that make up the hierarchy of many families, I just had the conversation with my brother-in-law, that I already had with a cousin who lived with us for 3 yrs, and my mother-in-law(God rest her soul), a few years before that.

Unless my oldest child, who is now 22, and been on his own over the past yr and a half(and made me a 42 year old grandfather, Im now 43) has learned the fine art of cooking, he, nor his other two brothers, 18 in April, and 10, have never been taught how to prepare it, so none could be snuck into while I'm away at work. I would have hated to have came home from work one morning and have to commence to thinning out some fibers lmBao. It was one of the 1st things I learned to cook, at the ripe young age of 8, then once my mom got an electric griddle, it was on, forever fascinated.

Anyway, the most recent creeper I got was my brother-in-law, which nonetheless, is the reason I'm so uptight. It's caused me to want to write up a contract for any potential future roommates. Something along the lines of, flush the toilet(hopefully, they come potty trained), put down the damn seat, pay your bills on time, and, unless you want to go hungry around lunch time, Buy Your Own Bacon!! Ctfu, no, seriously.

I've been gone, but now I'm back

I made a brisket, which ran a few days late of Christmas dinner... these two cheeses are for leftovers I've had planned as long as the brisket dinner itself.

Dinner from 2 Weeks Ago

Peach an Roasted onion BBQ sauced chicken an a smoked mac-n-four-cheese penne pasta dish.
Not coming off any secrets to how the flavor of any one of the 2 dishes were obtained, but I will tell you the ingredients used in the pasta.
2Lbs penne pasta
1Lb extra sharp cheddar
1Lb Colby-Jack
12 slices provolone
3/4c parmesan
1Lb homemade Chorizo(ask I'll tell you my quick dumbed dwn version)
8oz black forest ham
1/2 can evaporated milk
16oz heavy whipping cream.
I've got 4 events coming up in the next few weeks where the mac-n-cheese is scheduled to be featured by request of those participating, I for one cannot wait... The flavor is impeccable.

Fishing the Ohio

Made a paste of bacon grease, lemon pepper, garlic, smoked paprika, an curry, then hickory smoked... Had to hide the taste of the Ohio somehow.

Update

I'm still here. I have attended an entrepreneurial business course an have the steps laid before me to obtain this goal. You who have followed me long enough know my plan is to work out of a concession trailer... By nature of the class I now have to start operation out of a brick and mortar. Hey, However I gotta do it, to start the next phase, just know the vision is nearing its dawning to the masses.
